Not everyone is a fan of eggplants or aubergines. The problem that people have over it is either the taste or texture. Eggplants are basically included as an acquired taste. However, if people’s first reaction to eggplants is that they’re bitter and bland then they must’ve not prepared it the right way. Here are some dishes that will change your mind about aubergines.
1. Eggplant Parmesan
This dish is maybe the most popular one to make the haters love eggplants because it is known to be comfort food. To avoid oil uptake, bake the bread-coated eggplant slices instead of frying them before arranging the dish to bake again so you won’t end up with a mushy pile.
2. Ratatouille
Ratatouille is a vibrant and hearty vegetable stew filled with garlic and herbs and rich in olive oil that is perfect for summer. It is traditionally made just on the stovetop in Provence. Every veggie is sautéed in olive oil until it is soft but not mushy. Finally, the tastes are harmonized by combining all of the ingredients and simmering them together.
3. Moussaka
Moussaka is the Greek’s low carb version of Lasagna. This traditional Greek recipe, with a delicious tomato beef sauce piled with eggplant rather than pasta layers and covered with a generous amount of béchamel sauce. It takes time but it’s so worth it.
4. Baba Ganoush
Baba Ganoush is a somewhat different Middle Eastern eggplant dip than Moutabal. This one contains extra vegetables such as tomatoes, onion, and parsley. It’s perfect for dipping pita bread and fresh vegetables. Because this is a dip, you want to make sure that you cook the eggplant even after it’s done, charred to get that smokey flavor, the smokier the better.
